Fruit & Nut Granola

Ingredients

  • 2/3 cup vegetable oil
  • 2/3 cup honey
  • 1/4 cup packed light-brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 container (8 ounces) old-fashioned oats (6 cups)
  • 1 jar (7 ounces) unsalted shelled sunflower seeds
  • 1/2 cup slivered almonds
  • 1 cup raisins
  • 1 cup dried apples, chopped
  • 1/2 cup each dried cranberries and dried blueberries
  • 1/2 cup dried peaches, chopped

Cooking Instructions

Position racks to divide oven in thirds. Heat to 350°F. Have 2 jelly-roll pans ready.

In a medium-size bowl, whisk oil, honey, sugar and cinnamon until blended. In a large bowl, mix oats, sunflower seeds and almonds. Pour on honey mixture; toss to mix and coat. Divide evenly between pans.

Bake 25 minutes, stirring every 10 minutes and switching position of pans halfway through baking, until granola is golden brown and toasted. Cool, transfer to a large bowl and stir in dried fruits. Store airtight.

 

Store: Room temp, 2 months
