1. Set aside a dozen or so perfect berries for garnish. Peel, pit and slice one of the peaches and gently toss it with all the remaining berries in a large bowl, using a light touch to avoid bruising or mashing the fruit. Add the lemon juice and up to 1 tbsp of sugar. (If your berries are exceedingly sweet, you may only need a teaspoon to marry the various flavors. The sweetness will increase as the fruit absorbs the juices.) Mix gently and chill for at least 30 minutes and up to several hoursx
2. Peel, pit and slice the remaining 2 peaches over a blender jar or food processor bowl to catch the juice. Puree the peaches with the orange juice and liqueur (if using) until you have a thick, smooth sauce. Add the remaining sugar by teaspoonfuls, testing for sweetness in between. In the height of the season, you may not need any sugar at all. If you are not going to use the sauce right away, cover and refrigerate it until serving time.
3. To assemble, spoon some of the fruit and juice into 6 parfait glasses or wine goblets. Drizzle several spoonfuls of the peach sauce over the fruit, then add a small scoop of yogurt cream. Continue layering until the glass is about 2/3 full. Top with a last dollop of the cream and garnish with reserved berries, mint leaves or edible blossoms. Serve immediately.
