Fruit Salad with Lime Yogurt

Ingredients

  • 1 large ripe honeydew melon, seeded and cut into 1 1/2-inch chunks
  • 1 pint strawberries, hulled and halved
  • 1/4 cup fresh lime juice
  • 2 tablespoon sugar
  • 2 cups nonfat plain yogurt
  • 1/4 cup sugar
  • 1 tablespoon freshly grated lime zest
  • 1 tablespoon fresh lime juice

Cooking Instructions

1. In a large bowl, toss melon, strawberries, lime juice and sugar. Let stand for 15 minutes, stirring occasionally.

2. Meanwhile, in a small bowl, combine yogurt, sugar, lime zest and juice, stirring until sugar is dissolved. Cover and refrigerate until chilled.

This easy recipe can dress up any fruit salad.

Love the subsitution idea

For those of us crunched for time, I love the idea of using sugar-free, low-fat key lime yogurt. Sounds like it would work great as a dip for fresh fruit platters as well. Thanks for a fast and easy recipe idea.

Save a step

key lime flavored yogurt. Leave out the lime juice & 1/4 c sugar. I've made a fruit salad like this & it's yummy. You can a variety of fruits, actually. sugar-free yogurt; you'll have something delicious without guilt.
