Fruit Salsa

Ingredients

  • 3 tablespoons fresh lime juice
  • 3 tablespoons honey
  • 4 medium oranges
  • small pieces (1 1/2 cups)
  • 8 ounces jicama, peeled and cut in thin, short sticks (1 1/2 cups)
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons minced fresh jalapeño pepper

Cooking Instructions

Stir lime juice and honey in a medium serving bowl until blended. With a sharp knife cut peel and white membrane (pith) from oranges. Holding oranges over the bowl, cut between membranes to release sections. Squeeze juice from membranes into bowl.

Add remaining ingredients and stir gently with a rubber spatula to mix and coat. Serve within a few hours or cover and refrigerate up to 3 days. Bring to room temperature before serving.

For more heat, use serrano chile peppers instead of jalapeño.
