1. In a dry skillet, separately roast all the ingredients except the nutmeg. You will know that the spices are roasted when they give off their aromas. When they do, remove them from the heat. Remove the husk from the cardamom seeds.
2. Place the roasted spices in a spice grinder or coffee grinder and finely grind. Grate the nutmeg over the mixture and store in an airtight container.
