Up to 1 day before serving, mix together miso and 1 Tablespoon water in a small bowl. Press the garlic through a press and add it to the miso and mix well. Thickly spread mixture all over pork chops. Put the pork chops in a shallow baking dish large enough to hold chops in one layer. Cover with foil. Marinate, refrigerated, for 8 to 12 hours, turning several times.
When ready to cook, preheat the broiler. Remove pork from baking dish and evenly re-spread the marinade over chops. Place chops on a rimmed baking sheet. Season with freshly ground black pepper. Place the chops in the broiler, about 4- to 5-inches from the heat, for 5 minutes. Turn chops over and broil 5 minutes longer. Serve immediately.
Round out the Meal:
With Japanese or short grain rice flavored with a little fresh ginger juice and butter, and steamed snowpeas drizzled with a little Asian sesame oil.
Healthy Hint:
If pork isn't in your diet, replace with chicken, fish, tofu or a combination of skewered vegetables and meat.
Kid Friendly:
Miso is very kid friendly. Replace or limit garlic. Add 1 teaspoon sugar or honey plus 1 Tablespoon of low-sodium soy sauce and your children will be asking for more.
