German Sausage Sandwiches

Ingredients

  • 1 pkg (9 oz) fully cooked roasted garlic–flavor chicken sausages
  • 1 lb deli potato salad
  • 1 cup diced unpeeled apple
  • 1 cup diced cucumber
  • 3 Tbsp snipped fresh dill
  • 4 small hero rolls, split, toasted if desired
  • 8 tsp Dijon mustard
  • 1 jar (16 oz) sweet and sour red cabbage, well drained, warmed if desired

Cooking Instructions

Heat a medium nonstick skillet. Add sausages, cover and cook over medium-high heat, turning occasionally, 6 minutes or until lightly charred and hot.

Mix potato salad, apple, cucumber and dill in a serving bowl.

Spread rolls with mustard; add sausages and top with red cabbage. Serve with the salad.
