Gilberta's Kicking Cole Slaw

Ingredients

  • 2 1/2 Cups shredded green cabbage
  • 2 1/2 Cups shredded red cabbage
  • 1 Cup shredded carrots
  • 2 TBS finely sliced green onions
  • 1 1/2 Cups peeled and diced cucumber
  • 2 ea jalapenos stemed seeded minced
  • 1 teas lemon juice
  • 1/4 Cup cider vinagar
  • 1 1/2 TBS sugar
  • 3/4 tsp salt
  • 1/2 tsp freshly ground pepper
  • 1/2 Cup mayonnaise
  • 2 TBS sour cream
  • 3 TBS freshly grated horseradish (1 1/2 TBS prepared)
  • 1 1/2 tsp coarse-grained mustard
  • 1 Cup Quartered radishes for garnish

Cooking Instructions

In a large mixing bowl combine cabbages carrots and green onions..

In a small bowl combine jalapeno's cucumbers and lemon juice. Add to cabbage mixture

In small mixing bowl combine vinegar sugar salt/pepper. Whisk util sugar is dissolved. Pour over cabbage mixture and toss to combine.

Cover with plastic wrap and refrigerate 20 to 30 minutes.

In small bowl combine mayonnaise sour cream horseradish and mustard. Add to coleslaw and toss thoroughly. Cover and refrigerate at least 1 hour (overnight OK)

Quater the radishes and sprinkle over the top just before serving.

Recipe Notes

Make ahead - Cover tightly or it will kick the top off.
