Ginger-Grapefruit Granita

Ingredients

  • 4 large pink or red grapefruit
  • 3 Tbsp fresh lime juice
  • 11/2 Tbsp finely grated, peeled fresh ginger

Cooking Instructions

Squeeze juice from grapefruit (you should get about 4&&#-35;8209;cups). Add lime juice, ginger and up to 3⁄4 cup sugar, depending on sweetness of grapefruit. Stir until sugar dissolves. Pour mixture into a 9-in. square metal pan.

Freeze at least 4 hours, stirring frozen edges into center with a rubber spatula every 30 minutes until entirely frozen. Serve or cover with foil and freeze up to 1 week.

To serve: Scrape surface of granita with a large sturdy metal spoon. Mound in serving dishes. Garnish, if desired, with grapefruit sections and mint.
