Granny's/Memaw's Orange Icin..

Ingredients

  • 1 pint Fresh Orange Juice
  • 6 Oranges
  • 2 cups Sugar
  • 1/2 stick Buttter
  • 5 Egg yolks

Cooking Instructions

Grate oranges. Save & put aside Rind. Very Important.

Squeeze Oranges & strain.

Beat Egg Yolks, add Juice & Sugar while still cold.

Add Butter & cook on low heat, stirring constantly until mixture thickens.

Add Grated Orange Rind just as you remove mixture from heat.

Makes approx. two pints. Put in jars & cap.

Best if used with White or yellow cake.

Do not refrigerate until cold. Mixture will keep for some time. Say Thanksgiving until Christmas.
