Ingredients

  • 1 pkg (0 oz) fully cooked carved chicken breast
  • 1 jar (12 oz) roasted red peppers, drained, patted dry and cut in strips
  • 1 pkg (4 oz) crumbled feta cheese
  • 12 pitted kalamata olives, coarsely chopped
  • 4 burrito-size flour tortillas, at room temperature
  • 1/2 cup purchased refrigerated ranch dip
  • 1 bag (5 to 6 oz) fresh baby spinach
  • 1 bag (8 oz) carrot sticks
  • 1 cucumber, cut in sticks

Cooking Instructions

Put chicken, roasted peppers, cheese and olives in a medium bowl. Stir to mix.

Spread 1 side of each tortilla with 2 Tbsp ranch dip. Top each tortilla to 1 in. from edge with 1⁄4 of the spinach, then top with the chicken mixture.

Starting at edge nearest you, tightly roll up tortillas. Cut each wrap in half diagonally. Serve with carrot and cucumber sticks.
