Ingredients

  • LEMON-OREGANO DRESSING
  • 3 tablespoons olive oil, preferably extra-virgin
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons minced fresh oregano leaves or 1/2 teaspoon dried
  • 1/4 teaspoon each salt and freshly ground pepper
  • 4 medium-size ripe tomatoes, cut in 11/2-inch chunks (31/2 cups)
  • 2 medium-size green bell peppers, cored, seeded and cut in 11/-inch pieces (3 cups)
  • 1 large cucumber (10 ounces), quartered lengthwise and cut crosswise in 11/2-inch chunks (3 cups)
  • 1 cup thinly sliced onion
  • 4 -ounce chunk feta cheese, cut in 1/2-inch cubes (11/ cups)
  • 8 calamata olives (Greek olives), halved and pitted

Cooking Instructions

Whisk dressing ingredients in a large serving bowl until blended.

Add remaining ingredients and toss gently to mix and coat. Serve or cover and refrigerate up to 24 hours. Bring to room temperature before serving.
