1. Place the water in a 4-quart saucepan, add the red dye and vinegar, and bring to a boil. Reduce the heat to medium-low, and simmer for 5 minutes.
2. Remove the saucepan from the heat and carefully add the eggs. Return the pan to the stove and place over low heat. Simmer the eggs for 15 minutes.
3. Remove the eggs from the pan with a slotted spoon and place them on paper towels to dry. When dry and cool, polish each egg with a clean cloth or paper towel that has been soaked in olive oil.
