Not Greek coffee

This recipe is not for Greek style iced coffee. The concept of the Frappe, as it is known in Greece, was developed by Nestle to promote their instant coffee. European Nestle's instant coffee is excellent, not to be confused with what we see here in the United States. The recipe called for instant coffee, sugar, ice and water, all to taste. Nestle discovered that the coffee would thicken and froth if shaken or whipped in a blender. No milk. Ever.

Actually, the way I saw it made...

I like it stronger and sweeter, so I wrote down another way I saw it done in Santorini. 2 Tablespoons instant coffee 1 Tablespoon Sugar Heavy Splash of Milk (any) handful of ice Water Mix coffee, sugar and about 1 inch of water in a tall drinking glass. Whip mixture with hand milk frother or drink mixer until dark brown. Put in ice. Pour water until about 2 inches from top of glass. Top with a heavy splash of milk. If you like coffee--this is your drink.
