Greek Stuffing

Ingredients

  • 1/4 cup olive oil
  • 1 large onion, peeled and minced (about 1-1/2 cups)
  • 6 oz ground beef or lamb (about 2/3 cup)
  • 1 can (14 ounces) Italian plum tomatoes, drained, coarsely chopped and liquid reserved
  • 1/3 cup long-grain rice
  • 2 tsp kosher salt
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/4 tsp freshly ground black pepper

Cooking Instructions

1 Heat oil in a 2-quart souffle dish, uncovered, at 100% for 2 minutes. Stir in onions and beef Continue cooking, uncovered, for 5 minutes, stirring once.

2 Remove from oven. Pour off all but 1/4 cup drippings from pan. Place mixture in the workbowl of a food processor. Add tomatoes and process just until meat is finely chopped. Stir in remaining ingredients.

Note. Add 1 tbsp fresh lemon juice to the cooking liquid for Stuffed Bell Peppers when using Greek Stuffing.
