Directions: • Heat about a ¼ of a cup of olive oil in a large sauce pan. Add ¼ cup chopped onions and 1 minced garlic clove; sauté, stirring until tender, about 5 minutes. (Note: do not over cook the garlic. This will make it taste bitter.) Stir in 3 cans (8 oz. size) tomato sauce, 1 tablespoon chopped parsley, 1 tablespoon of sweet basil, 1 tablespoon of rosemary. Heat to boiling, reduce heat and simmer for 30 minutes uncovered. Brown ¾ of a pound of sweet Italian sausage and ¼ of a pound of ground pork and add to sauce and let simmer. .
• In a pie pan, beat 1 egg with ¼ of a cup of milk and 1 tablespoon of olive oil. Slice 6 medium-size green tomatoes ½-inch thick. Lay out on a paper towel to drain. Coat tomato slices in flour, then dip into egg mixture. Add ¼ cup of olive oil to a skillet, fry tomatoes until golden brown on both sides, adding oil as needed.
• Arrange in alternate layers in 8x12 inch pan the tomato sauce, tomatoes, ½ pound Mozzarella cheese, shredded, and ½ cup grated Parmesan cheese. Sprinkle top with more grated Parmesan
• Bake in preheated oven at 350 degrees for 30 minutes.
