Place chicken and vinaigrette in a plastic ziptop food bag. Marinate in refrigerator at least 60 or overnight.
Heat stovetop grill pan over medium heat or heat broiler.
Cut apples and sweet potatoes crosswise in 1/2-in.-thick rounds and place on waxed paper. Coat slices with nonstick spray; sprinkle potatoes with salt and pepper. Remove chicken from bag; discard marinade.
Grill or broil (4 to 6 in. from heat) potatoes 8 minutes per side, apples 6 minutes per side and chicken 3 minutes per side or until potatoes and apples are charred and fork-tender and chicken is just cooked through.
