Choose steaks of salmon, halibut, haddock, tuna, or cod. Brush on both sides with oil or melted butter and lemon juice. Season to taste with salt and pepper. Let stand 1/2 hour at room temperature. Arrange directly on an oiled grill or an oiled hinged grill with a long handle. Grill 10 to 12 minutes in all, turning several times, basting frequently to keep fish moist. Do not overcook. Serve with lemon wedges.
