Grilled Georgia Peaches with Vanilla Y..

Ingredients

  • 4 ripe, but still slightly firm peaches
  • 2 tablespoons maple syrup
  • 1 cup low fat or regular vanilla yogurt
  • 1 tablespoon chopped pistachios
  • Fresh mint for garnish

Cooking Instructions

FIRST: Preheat grill to medium-high heat. Cut peaches in half and remove pit (leaving skin on) and brush with maple syrup.

NEXT: Oil grill grates and grill peaches for about 4 minutes per side, until grill marks form and peaches are tender.

LAST: Place two peach halves on each plate and top with yogurt and a sprinkle of chopped pistachios. Garnish with fresh mint and serve immediately.
