Grilled Lemon-Herb Fish

Ingredients

  • 6 firm-fleshed fish steaks (5 oz each), such as tuna, salmon, mahi-mahi, grouper or amberjack
  • 1 recipe Lemon-Herb Rub
  • Nonstick olive oil or butter-flavored cooking spray

Cooking Instructions

1. Rinse the fish, and pat it dry with paper towels. Coat both sides of each fish steak with some of the rub, and set aside for 15 to 30 minutes.

2. Spray the steaks lightly with the cooking spray, and cook, covered, over medium coals or broil 6 inches under a preheated broiler for 5 minutes on each side, or until the meat is easily flaked with a fork. Serve hot.
