Pre-heat grill to medium high.
Halve peaches and remove pits. Spray lightly with cooking spray and grill face-down over medium gas or charcoal heat until grill marks appear and fruit is soft. Note -- wood smoke such as mesquite or hickory adds a great touch of flavor.
Meanwhile place one cup of pita chips into a sealable plastic bag and crush with a rolling pin or wooden spoon.
Remove fruit from grill and place each half in a dish. Sprinkle the peaches with the crushed chips and top with a scoop of vanilla ice cream or your favorite fruit sorbet. Add a couple of grinds of fresh black pepper on top and serve immediately.
Serving size: 1/2 peach and 1/2 cup ice cream or sorbet
