Grilled Prosciutto Wrapped Peaches

Ingredients

  • 2 firm, but ripe unpeeled peaches, each cut into 4 equal sized wedges
  • 2 tsp olive oil
  • 2 oz fresh goat cheese
  • 8 basil leaves
  • 2 oz thinly sliced prosciutto, about 4 long slices, torn in half
  • good quality balsamic vinegar for drizzling

Cooking Instructions

FIRST Preheat grill to medium heat, about 400°F. Toss peaches with olive oil to coat. Oil grill grates and grilled peaches until slightly tender and grill marks form, about 2-3 minutes per side.

NEXT Once peaches have slightly cooled, spread 1 1/2 teaspoons of goat cheese onto one side of each peach wedge and wrap with a fresh basil leaf and thin slice of prosciutto.

LAST Arrange on platter, drizzle with balsamic, and top with freshly ground black pepper.
