Grilled Scampi Salad

Ingredients

  • 1 lb medium shrimp (32 to 36), peeled and deveined
  • 1/2 cup bottled red-wine vinaigrette
  • 1 Tbsp each Dijon mustard and minced garlic
  • 2 bags (10 oz each) Italian- or European-blend salad greens
  • 1/2 cup Parmesan fish-shaped crackers
  • 3 Tbsp grated Parmesan cheese

Cooking Instructions

Heat barbecue grill. Prepare shrimp for grilling (see Tip).

Whisk Dressing ingredients in a salad bowl until blended. Remove 2 Tbsp and brush on shrimp. Add remaining ingredients to salad bowl.

Grill skewered shrimp 4 to 6 in. from heat source 4 to 5 minutes, turning once, until just barely opaque at center. Slide off skewers into salad bowl. Toss salad and serve.
