Grilled Vegetable Sandwiches

Ingredients

  • 1/2 cup Pace® Picante Sauce
  • 1/4 cup red wine vinegar
  • 1 tsp. dried oregano leaves , crushed
  • 1/4 tsp. garlic powder or 2 cloves garlic
  • 2 portobello mushrooms
  • 1 small eggplant , sliced lengthwise 1/2" thick
  • 2 small zucchini , sliced lengthwise
  • 1 large green OR red pepper, cut into halves
  • 4 long Pepperidge Farm® Classic Sandwich Buns with Sesame Seeds , split and toasted
  • 1/2 cup shredded mozzarella cheese

Cooking Instructions

MIX picante sauce, vinegar, oregano and garlic.

GRILL mushrooms, eggplant, zucchini and pepper 15 min. or until tender, turning and brushing often with picante sauce mixture. Slice mushrooms and pepper.

SERVE vegetables in rolls and top with cheese. Serve with additional picante sauce.
