Ingredients

  • 1 cup old-fashioned grits
  • 41/2 cups water
  • 1 cup quartered cherry tomatoes
  • 2 scallions, trimmed, cut into 1/-inch pieces
  • 3 -ounce chunk low-fat Cheddar cheese, diced

Cooking Instructions

Cook grits according to package directions, using 41/2 cups water. When cooked, stir in remaining ingredients. Spoon into bowls, cover tightly with plastic wrap and refrigerate up to 3 days. Reheat in microwave.

 

Enjoy with a piece of fruit and glass of milk.
