Halibut in Green Tea Broth With Quinoa..

Ingredients

  • 4 Halibut fillets (6oz each)
  • Course salt and ground pepper
  • 2 Tbsp Peanut Oil
  • 1 piece of fresh ginger (2 inches) peeled and finely chopped
  • 1 baby bok choy thinly sliced lengthwise
  • 1 cup frozen shelled edamame thawed
  • 4 oz shiitake mushrooms stemmed and thinly sliced
  • 1/2 cup snow peas strings removed thinly sliced lengthwise
  • 1 cup brewed green tea
  • 1 Tbsp light soy sauce
  • 1 tsp honey
  • 1 cup quinoa

Cooking Instructions

Preheat oven to 400 degrees.

In a medium saucepan bring 2 cups salted water to a boil. Add quinoa reduce to simmer cover and cook until quinoa is tender and water has been absorbed. About 15 minutes.

Meanwhile in a large skillet heat oil over medium-high. Cook fillets until golden 2-3 minutes per side. Remove fillets from pan and place in baking dish and bake for 8-10 minutes until fish is cooked through.

Add ginger bok choy edamame shiitakes and snow peas to skillet. Stir constantly until for 3 minutes or until shiitakes begin to soften.

Add green tea soy sauce and honey. Cook until edamame are tender about 3 minutes longer.

Serve fish broth and vegetables over quinoa.

Recipe Notes

I used sesame oil instead of peanut oil and it tasted fine. Recipe comes from Body + Soul magazine.
