1. While you're slicing vegetables, place the tortillas, wrapped in foil, in a 350F oven, about 5 to 8 minutes. When the tortillas are warm, remove them from the oven.
2. On each tortilla spread some of the mayonnaise-mustard mixture.
3. Place lettuce leaves over each tortilla. Scatter some of the onion and tomato slices over each.
4. Place slices of the ham and slices of the Swiss cheese on each. Add salt and pepper to taste.
5. Roll up each tortilla gently but firmly. Wrap them in foil and chill for at least 20 minutes. Cut each rolled-up sandwich in half, cover with plastic wrap, and pack in a lunchbox.
