
Heat oven to 350°F. Coat a small nonstick skillet and a shallow 2-qt baking dish with nonstick spray.
Heat skillet over medium-high heat. Add onion and sauté 4 minutes, or until golden and soft. Add ham, spinach and cheese; stir to mix well.
Spread half the ham mixture over bottom of prepared baking dish. Top with bread, slices overlapping, then remaining ham mixture. Whisk remaining ingredients in a medium bowl until blended. Pour evenly over strata. Cover and refrigerate up to 1 day.
To bake: Heat oven to 350°F. Bake uncovered 40 to 50 minutes until puffed and lightly browned.
Make-Ahead Tip: Can be made through Step 3 up to 1 day ahead.
