Ham with Hawaiian Salsa and Sweet Potatoes

Ingredients

  • Salsa
  • 1/4 fresh pineapple, cored and finely diced
  • 1/2 red onion, finely diced
  • 2 Tbsp chopped cilantro
  • 2 tsp freshly grated lime peel
  • 1 Tbsp fresh lime juice
  • 1/4 tsp crushed red pepper
  • 1/4 tsp salt
  • Sweet Potatoes
  • 2 Tbsp oil
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper
  • 2 large sweet potatoes (about 12 oz each), each cut in 8 long wedges
  • 11/2 tsp honey
  • One 1-lb precooked ham steak

Cooking Instructions

Salsa: Gently mix ingredients in a serving bowl.

Heat outdoor grill.

Sweet Potatoes: Mix oil, salt and pepper in a large bowl. Add potatoes; stir to coat. Grill 30 minutes, turning wedges occasionally, until slightly charred and tender when pierced.

Ham: Mix honey with 1 tsp water. Brush on ham. About 3 minutes before potatoes are done, add ham to grill. Grill, turning once until hot and marked with grill lines. Serve with the salsa and sweet potatoes.

Editor’s Note: Grilling times given are approximate. If using a gas grill, bear in mind that when cooking food with the lid closed, even a quick peek can cool the grill enough to require an increase in cooking time.
