Herb Salt Roasted Potatoes

Ingredients

  • 6 to 8 large Yukon gold potatoes cut into large chunks
  • extra-virgin olive oil
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon grated lemon zest
  • 1 1/2 tablespoons kosher salt
  • freshly ground black pepper

Cooking Instructions

Pre-heat the oven to 375 degrees F.

Begin with the herbed salt. Combine the rosemary, thyme, parsley, lemon zest and salt in a food processor. Pulse until finely ground and the salt takes on a nice green color.

Put the potatoes onto a baking sheet and drizzle with olive oil and some freshly ground black pepper. Roast in the oven for 35 minutes and then turn. Season the potatoes generously with the herbed salt and continue to roast for 10 more minutes. When the potatoes are tender and golden serve.
