Pour all veggies into large pot and pour V8 juice into the pot simmer low.
Take carrots and was well using a scruber to take away all dark spots and dirt. cut carrots into 1/4 inch thick round slices.
now take the potatoes using the same knife peel the potatoes as close as possible leaving most of the potatoe. was well with cold water. cut into medium to large chuncks and add to simmering stew with the carrots. let simmer for 1 1/2 hours stirring often to keep from sticking.
Remove from heat let stand 10 minutes serve with crackers.
this was done one cold night, and we did not have any stew meat or steak, and we all wanted a meal that would fill us and warm us up from the inside out. so my twins said HB meat and from then on we called it Hobo stew, for having HB and not stew meat.

HOBO Casserole...I learned a version of this from my Aunt and Uncle years ago! It is an excellent, filling meal on its own. Of course you drain the hamburger after cooking it and I add a couple of beef broth cubes and salt and pepper. It good ole home cookin!!!! |
