HomemadeTurkey Noodle Soup

Ingredients

  • 1 large onion minced
  • stalk 1 Fresh Celery chopped
  • 3-4 C Chopped left over Turkey light & dark
  • all Turkey Carcuss
  • 5-6 C Water & left over gravey
  • cups 2 Frozen mixed vegetables, corn, carrots, peas
  • cups 3 dried noodles or rice

Cooking Instructions

Simmer all ingredients together except the noodles/rice. After seasoning with salt & pepper to taste, remove carcuss, debone, lift out skin, fat, or grissle. Defat if too much oil/grease floats to top. Ice cubes in hot liquid will cooagulate the grease, remove & add more until satisfied with broth/stock. Add Noodles/rice & simmer for 20 minutes. Add parsley if desired, makes a big pot of soup that is hearty & uses up most of your left overs and it's healthy too.
