Heat oven to 350°F. Have ready a large roasting pan.
Stir oats, almonds and coconut in pan to mix well.
In a medium bowl, whisk butter, sugar, honey, vanilla and cinnamon until smooth. Pour over oat mixture. Toss with a fork to coat.
Bake 50 minutes, stirring with a fork every 10 minutes, until mixture is golden brown and toasted.
Cool in pan on a wire rack about 50 minutes, stirring occasionally. Stir in cranberries. Store airtight.
