Slit and stuff each hot dog with jalapeƱo and cheese. Tie each hot dog crosswise in two places with butchers string to hold in the filling.
Set up the grill for direct grilling and preheat to high.
When ready to cook, place the hot dogs on the hot grate so they are supported by the bars of the grate. Grill until nicely browned on the bottom and both sides, slightly tilting the dogs on their sides with tongs to brown them, 8 to 10 minutes. Turn the hot dogs perpendicular to the grate for the last 2 minutes of grilling for attractive grill marks. Transfer to a platter and snip off and discard the strings.
Brush the inside of the buns with the melted butter and grill them on the grill for 1 minute. Serve the "hot" dogs with the toppings of your choice.

Not long after WWII my mother bought a little government cooking pamphlet with a recipe for a slit hot dog stuffed with cheddar and wrapped in a bacon slice, secured with toothpicks and broiled, just as kellypetepage said. We never had them cooked any other way. My father wouldn't eat them (he was extremely conservative about food, and hot dogs were too downscale for him) but we had them when he was out of town. I haven't eaten a hot dog in years but I do remember my mother's. She was not a good cook but we liked those weiners, even when she broiled them too long and they dried out a bit. She would have hated jalapenos if she had ever tasted one but I love hot peppers so to me they are a nice addition. |

I remember my mother slicing hot dogs length wise then inserting a slice of cheddar cheese and a slice of dill pickle then wrapping it with a slice of bacon, secured with tooth picks at each end and broiling them.
