Ingredients

  • 1 cup white cornmeal
  • 1 cup sifted all-purpose flour
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/2 medium yellow onion, chopped fine (1/2 cup)
  • 1-1/2 cups fat-free buttermilk
  • 4 egg whites
  • 2 - 6 tbsp vegetable oil

Cooking Instructions

In a large bowl, mix together cornmeal, flour, baking soda, baking powder, salt, and onion. Set aside. In a small bowl, stir together buttermilk and egg white. Mix well, and add to cornmeal mixture.

In a heavy skillet, heat 2 tablespoons of the oil until hot. Drop batter by tablespoonfuls into the hot skillet, and cook, turning with a spatula, until hush puppies are golden brown on all sides. Repeat until all of the batter is used, adding more oil, 2 tablespoons at a time, as needed.
