Ingredients

  • 1-1/2 cups white cornmeal
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • About 3/4 cup milk
  • 1 egg, lightly beaten
  • 2 tbsp vegetable oil
  • 2 green onions with tops, minced
  • Vegetable oil for cooking

Cooking Instructions

Sift cornmeal, flour, baking powder, and salt into a medium-size bowl. Combine 3/4 cup milk, egg, 2 tablespoons oil, and the green onions in a small bowl.

Stir milk mixture into dry ingredients just until combined. Stir in more milk if mixture is too thick to drop from a spoon.

Heat about 2 inches of oil in a heavy pan or deep-fat fryer to 375F. Drop batter into hot oil by spoonfuls. Fry about 3 minutes or until golden brown. Remove with a slotted spoon. Drain on paper towels. Let oil return to temperature before adding the next batch.
