Ingredients

  • 2 pounds all natural ground turkey, shaped into 6 burgers (for moister burgers, a mix of white & dark meat)
  • 6 slices fresh pineapple, cored
  • Cucumber & Tomato Chutney (recipe follows)
  • Mango Curry Sauce (recipe follows)
  • Romaine, thinly sliced
  • 2 Tbs. olive oil for brushing buns
  • 6 Brioche or good quality hamburger buns
  • Kosher or Sea salt
  • Freshly ground pepper
  • 1/2 English cucumber, quartered lengthwise, seeded & thinly sliced
  • 1/2 pint grape tomatoes, halved
  • 1/2 small red onion, halved & thinly sliced
  • 1 Tbs. fresh mint, finely chopped
  • 1 Jalapeno, seeded & finely chopped
  • 1/2 cup fresh lime juice
  • 1 Tbs. sugar
  • 1/4 cup water
  • 1/2 cup Mango Chutney- medium hot
  • 1/2 cup Greek yogurt
  • 1/2 cup mayonnaise
  • 2 tsp. curry powder
  • 1 Tbs. fresh cilantro leaves, finely chopped
  • 1 tsp fresh ginger, finely minced
  • 1 tsp fresh lemon juice

Cooking Instructions

To prepare chutney: In a small bowl, combine lime juice, sugar & water, stir well to combine. In another bowl, add cucumber, grape tomatoes, onion, mint, jalapeno & add lime juice mixture. Mix together & season with salt & pepper. Refrigerate 1 day.

To prepare Mango Curry Sauce: Puree Mango Chutney in mini food processor. Put in mixing bowl, add yogurt, mayonnaise, curry, cilantro, ginger, lemon juice & combine. Season with salt & pepper & refrigerate.

To prepare burgers: Prepare the grill to medium-hot heat & lightly oil grill. Spray vegetable or olive oil on pineapple & grill until lightly brown. Grill turkey burger to medium doneness (about 4 minutes per side) & season with salt & pepper.

Brush inside of buns with olive oil & grill cut side down on cooler side of grill until golden brown. Put romaine on bottom of bun cover with turkey burger and top with pineapple, Cucumber-Tomato Chutney & Mango Curry Sauce.
