Indonesian Baked Fish

Ingredients

  • 1 tablespoon minced garlic
  • 1 1/2 teaspoon salt
  • 1 teaspoon freshly ground pepper
  • four 6 to 8 oz. red snapper or salmon fillets
  • 1/2 cup soy sauce
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons brown sugar
  • 1/2 teaspoon crushed red pepper flakes (reduce a bit for kids)
  • vegetable oil for brushing
  • 2-3 tablespoons butter

Cooking Instructions

Directions: 1. Preheat the broiler and position a rack 6 inches from the heat. 2. In a small bowl, on a cutting board or with pestle and mortar mash the garlic with the salt and pepper until a paste forms. Rub the fish with the paste. 3. In a saucepan combine the soy sauce, lemon juice, brown sugar, and crushed red pepper. Bring to a boil over high heat stirring until the sugar dissolves. Add the butter to sauce and reduce heat. Turn off heat once butter is melted. 4. Brush a baking sheet with oil. Arrange the fillets on the baking sheet and pour half of the sauce over them. Broil for 8 to 10 minutes or until the fillets are firm to the touch. Transfer the fish to dinner plates and serve with steamed rice with the remaining sauce poured over fish and rice. Fast and easy!
