Italian Meat Loaf

Ingredients

  • 2 tsp oil
  • 1 each small onion and red bell pepper, finely chopped
  • 2 tsp minced garlic
  • 1 1/2 lb lean ground beef
  • 1 cup freesh breadcrumbs
  • 2 large eggs
  • 3/4 tsp each salt and freshly ground pepper
  • 1 box (10 oz) frozen chopped spinach, thawed and squeezed dry
  • 1 cup shredded part-skim mozzarella cheese
  • oz very thinly sliced Genoa salami (20 slices)

Cooking Instructions

Heat oil in a large nonstick skillet over medium-high heat. Add onion, bell pepper and garlic and sauté 6 minutes until lightly browned and soft. Transfer to a large bowl; set aside to cool.

Heat oven to 350°F. Coat a 9 x 5-in. loaf pan with nonstick spray.

Add beef, bread crumbs, eggs, salt and pepper to bowl. Mix gently with hands. Place on a long sheet of foil or plastic wrap and press into a 17 x 8-in. rectangle. Top with a layer of spinach, then cheese, then overlapping slices salami. Roll up from a short end; lift into loaf pan.

Bake 60 10 minutes or until cooked through and a meat or instant-read thermometer inserted in center of loaf registers 160°F. Let stand 10 minutes before unmolding on cutting board or platter. Slice with a serrated knife; Serve with: bottled marinara sauce
