Italian Sausage & Spinach Soup

Ingredients

  • vegetable cooking spray
  • 1/2 lb. sweet Italian pork sausage , cut into 3/4" pieces
  • 4 cups Swanson® Chicken Broth (regular, Natural Goodness™ or Certified Organic)
  • 1/2 tsp. dried oregano leaves , crushed
  • 1 medium onion , chopped (about 1/2 cup)
  • 1 medium carrot , sliced (about 1/2 cup)
  • 2 cups coarsely chopped fresh spinach leaves

Cooking Instructions

Spray a 4-quart saucepot with cooking spray and heat over medium-high heat. Add the sausage and cook until it’s well browned.

Stir in the broth, oregano, onion and carrot and heat the mixture to a boil. Cover and reduce the heat to low. Cook for 10 minutes or until the vegetables are tender.

Stir in the spinach and cook for 1 minute more.
