Italian Sausage Soup

Ingredients

  • 1 lb Italian sausage
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 1 green bell pepper, chopped
  • 1 teasp Italian seasoning
  • 1 28 oz can cut tomatoes
  • 1 15 oz can tomato sauce
  • 1 15 oz can beef broth (or chicken broth will work)
  • 1 15 oz can kidney beans
  • 1/2 cup dry red wine
  • salt and parmesan cheese

Cooking Instructions

Remove casings and crumble sausage into 3-4 qt pot. Cook and stir until sausage begins to brown.

Add onion and cook until soft. Drain if needed. Add bell pepper and garlic, seasoning and tomatoes (not drained), tomato sauce, beans and broth.

Simmer for about 20 minutes. Stir in wine and cook uncovered 3 minutes. Serve with parmesan cheese.

This is a great baseball season recipe because it's quick yet hearty. I chop the veggies in the morning and refrigerate. Then, I only have to dump it all in the pot and we have dinner in half an hour. It can be taken to the field in a thermos or i
