Italian Veal Stew

Ingredients

  • 3/4 cup each chicken broth and dry white wine
  • 1/4 cup flour
  • 1 /2 lb veal shoulder, cut for stew
  • 1 1/2 cups diced carrots
  • 3/4 cup diced celery
  • 1/4 cup chopped shallots
  • 1 bay leaf
  • 2 tsp chopped fresh rosemary
  • 1 can (14 1/2 oz) diced tomatoes, drained
  • 3 cups cooked orzo
  • Garnish: grated lemon zest, chopped parsley

Cooking Instructions

Whisk broth, wine and flour in a 31/2-qt or larger slow-cooker until blended. Stir in remaining ingredients except orzo.

Cover; cook on low 7 to 9 hours until veal is very tender. Sprinkle with lemon zest and parsley. Serve with orzo.

Great make ahead meal!

Very easy. The sauce this makes is very flavorful. You need to add salt and pepper to taste. I used regular onion instead of shallots and it came out fine.

Easy & Delicious! Similar to Osso Bucco

This recipe is simple and delicious, and reminds me of Osso Bucco without all the added fat from the marrow. I did add mushrooms the last 30 minutes of cooking time. Also, no where did it say quantity of salt and pepper, which is a necessity.
