Ingredients

  • 2 T Vegetable Oil
  • 1 1/2 c Bias cut Andouille Sausage
  • 1 c Chopped Onion (1 Large)
  • 2 ea Green Bell Peppers (Julienned)
  • 1 ea Minced Garlic Clove
  • 3/4 c Uncooked Rice
  • 2 c marinara
  • 1 c Chopped Cooked chicken
  • 1 1/2 c Chicken Stock
  • 1 ea Bay Leaf
  • 2 T Minced Parsley
  • 1/4 t Dried Thyme
  • 1/4 t Worchestershire Sauce
  • 1/4 t Cayenne Pepper

Cooking Instructions

Heat your oil in a large skillet over medium heat and cook your sausage, onion, green pepper and garlic until the onion is soft but not brown, 5 minutes or so. Stir in the remaining ingredients and bring to a boil. Lower the heat, cover, and simmer for about 30 minutes, stirring once or twice. Be sure your rice is well cooked before serving.
