1 Preheat the oven to 350F.
2 Peel the potatoes and cut them into 1/4-inch-thick slices. Stack the slices and cut them into 1/4-inch-thick strips to resemble french fries. There should be about 8 cups.
3 Cover the bottom of a baking dish (an oval dish measuring 13 x 8 x 2 inches is ideal) with half the potatoes. Drain the anchovies, reserving the liquid, and arrange them symmetrically over the layer of potatoes. Pour the reserved anchovy liquid evenly over all.
4 Scatter the onion slices over the top and sprinkle with pepper. Scatter the remaining potatoes evenly over all. Pour half the cream over and sprinkle with more pepper. Dot the top with butter and place in the oven. Bake about 30 minutes, or until the potatoes are light brown on top. Pour the remaining cream on top and continue baking 15 to 30 minutes longer, or until the potatoes are tender.
