Season potatos with salt and pepper. Saute in skillet with olive oil until golden brown. Saute breakfast sausage until golden and drain. Mix with soup and 1/2 cup sour cream. Toss with potatos. Pour beaten eggs over mixture and top with shredded cheese. Cover and bake for 1 hour or until eggs are set and casserole is bubbling. Cut into squares to serve.
This is a great way to feed a hungry family on a special morning. Serve with hot sweet rolls and fresh orange juice for a great meal!
