Heat oil in large stock pan until it shimmers. Add onion, carrots and celery. Saute until tender over medium low heat. Rinse lentils. Cover with 2 cups boiling water. Let sit for 15 minutes, drain. Add to stockpot. Add tomatos, broth, cumin, thyme, salt and pepper. Add ham hock, cover and bring to a boil. Reduce heat and simmer for 11/2 hours. During last half hour, add sliced smoked sausage (opt.) Check seasonings.
This soup is comforting any time of year. Eaten with a slice of warm crusty bread, sweet butter, cornichons and butter kaese cheese, its a great comfort meal!
