In bottom of 9 inch baking dish combine tomato sauce, vinegar, salt, Italian Herbs, olive oil, garlic and pepper. Place a layer of sliced eggplant on top of sauce. Sprinkle with kosher salt and fresh ground pepper. Top with layer of crookneck squash. Sprinkle with salt and pepper. Top with layer of onion and red bell pepper. Sprinkle with salt and pepper. Repeat if you have enough veges. Sprinkle with salt and pepper, top with fresh thyme, cover and bake at 350 degrees for 1 hour. Remove cover and sprinkle with cheese. Cover and continue baking for an additional 30 minutes. Serve over rice, or pasta. Top with additional cheese if desired, or top with goat cheese.
I love the bounty of fresh fruits and veges of the summer. And, I loved the recent movie, Ratatoulle. I decided to try my luck at this wonderful concoction, and although it didn't look as pretty as the one in the movie, it tasted awesome!

The combination of fresh thyme, garlic, onion and Italian herbs makes this a luscious side dish. Sprinkle with good fresh shredded parmesan and top angel hair pasta, rice, or even polenta for a delightful meal. Bon Appetit! |
