Season beef with kosher salt and pepper. In bottom of slow cooker place onion, celery, carrots, mushrooms and potatos. Place beef on top. Mix together sour cream, potato soup, onion soup mix and red wine. Pour over the top of the beef. Cover and cook for 6-8 hours or until beef is tender. Remove beef from pot and place on serving platter. Spoon cooked veges and potatos around it and add 1 T dijon mustard to sauce in pan. Bring to a boil and spoon over beef slices. Serve with hot cornbread or bread stix and green salad.
I love pot roast on a cold winter's night. This is a great recipe and easy to prepare. The slow cooker does all the hard work and the outcome is awesome.
