Jenny's Slow Cooker Beef

Ingredients

  • 1 3-4 lb Boneless beef roast
  • 1 large yellow onion peeled and cut into quarters
  • 3 large carrots peeled and cut into quarters
  • 2 stalks celery cut into 1 inch chunks
  • 3 Yukon Gold or Russet Potatos cut into quarters or 8ths (depending on size)
  • 1 T Kosher salt
  • 1 Tsp Fresh Ground Pepper
  • 1 cup Sour cream
  • 1 Package Beefy Onion Soup mix
  • 1/2 cup red wine
  • 1 T Dijon mustard
  • 1 can Cream of Potato Soup
  • 1/2 lb large mushrooms, sliced

Cooking Instructions

Season beef with kosher salt and pepper. In bottom of slow cooker place onion, celery, carrots, mushrooms and potatos. Place beef on top. Mix together sour cream, potato soup,onion soup mix and red wine. Pour over the top of the beef. Cover and cook for 6-8 hours or until beef is tender. Remove beef from pot and place on serving platter. Spoon cooked veges and potatos around it and add 1 T dijon mustard to sauce in pan. Bring to a boil and spoon over beef slices. Serve with hot cornbread or bread stix and green salad.

Recipe Notes

I love pot roast on a cold winter's night. This is a great recipe and easy to prepare. The slow cooker does all the hard work and the outcome is awesome.

Even my son liked it

This was a great recipe for a Sunday when you have other things to do. Just put it all together and let it go. I used a port wine, but a bit less than the recipe called for and it came out great.
