1. In the base of a food processor mix the butter and 1/2 cup of the sugar. Add the whole egg and the vanilla or rose water and process.
2. Mix together the baking powder, flour, and salt and add to the butter mixture. Whirl until the dough comes together in a ball. Set aside, covered, in the refrigerator for a few hours.
3. Roll the batter out 1/4 inch thin on a floured board and cut into round shapes about 2 inches in diameter. Place on a greased baking sheet, brush with egg yolk mixed with the cream. Sprinkle with 3 tablespoons almonds, and remaining sugar, and bake about 5 to 7 minutes in a preheated 400-degree oven or until a delicate brown.
