Jicama And Watermelon Salad

Ingredients

  • 3 cups Bite sized ripe watermelon pieces
  • 1 large Jicama peeled and cut into /4 inch pieces
  • 4 T fresh squeezed lime juice
  • 2 T Chopped cilantro
  • 1 tsp Chili Powder
  • 1/4 cup olive oil
  • 2 T chopped mint
  • 1/2 tsp sugar
  • 2 T Chopped cilantro

Cooking Instructions

Mix together lime juice olive oil sugar and chili powder. Toss with jicama and watermelon and sprinkle with chopped cilantro and mint. Refrigerate to chill before serving.

Recipe Notes

I always loved jicama sprinkled with lime juice and chili powder and began experimenting with another one of my summer favorites, watermelon. The end result has been a delicious and light salad that pairs well with spicy Mexican foods.
